A rich and comforting Italian dish featuring succulent chicken, sun-dried tomatoes, and fresh spinach in a velvety cream sauce.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for topping

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts generously with salt and pepper. Add them to the skillet and cook for about 6-7 minutes on each side until they are golden brown and fully cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Toss in the sun-dried tomatoes and spinach, stirring until the spinach wilts.
  5. Pour in the heavy cream and add the Italian seasoning. Mix everything together until well combined.
  6. Return the chicken to the skillet, ensuring it’s nicely coated in the creamy sauce.
  7. Let it simmer for a few minutes, then sprinkle generously with Parmesan cheese before serving.
