Ingredients
- 4 chicken breasts
- 1 cup heavy cream
- 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley)
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 medium potatoes, cut into wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Toss your potato wedges in olive oil, and season them generously with salt and pepper. Roast in the oven for 25-30 minutes, or until golden and crispy.
- While the potatoes cook, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5–7 minutes total.
- In the same skillet, add the minced garlic and sauté for about a minute until fragrant. Pour in the heavy cream, and add your fresh herbs. Stir the mixture well and bring it to a simmer.
- Return the chicken breasts to the skillet. Cover and let them simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
