Tender chicken breasts enveloped in a luxurious sauce made from heavy cream and fresh herbs, served with crispy roasted potato wedges.

  • 4 chicken breasts
  • 1 cup heavy cream
  • 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 medium potatoes, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss your potato wedges in olive oil, and season them generously with salt and pepper. Roast in the oven for 25-30 minutes, or until golden and crispy.
  3. While the potatoes cook, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5–7 minutes total.
  4. In the same skillet, add the minced garlic and sauté for about a minute until fragrant. Pour in the heavy cream, and add your fresh herbs. Stir the mixture well and bring it to a simmer.
  5. Return the chicken breasts to the skillet. Cover and let them simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Serve your Creamy Herb Chicken alongside the roasted potatoes for a colorful and satisfying meal.
