A nutritious twist on pizza that combines creamy cottage cheese, savory marinara, and fresh vegetables, baked to perfection.
Ingredients
- 1 cup Cottage Cheese
- 1 cup Marinara Sauce
- 1 cup Bell Peppers
- 1 cup Mushrooms
- 1 cup Spinach or Kale
- 1 cup Shredded Mozzarella Cheese
- 1 tablespoon Olive Oil
- Salt & Pepper to taste
- 1/4 cup Sliced Olives
- 1/4 cup Diced Onions
- Fresh Basil to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cottage cheese, marinara sauce, salt, and pepper. Mix until well incorporated.
- Toss the bell peppers, mushrooms, onions, and spinach (or kale) with olive oil in a separate bowl.
- Layer the creamy cottage cheese mixture on the bottom of a baking dish. Top with the veggie mixture.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Add your sliced olives on top of the cheese.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Remove from oven and let cool for a few minutes. Garnish with fresh basil before serving.
Notes
You can easily customize this bowl by swapping veggies or adding proteins like chicken or turkey sausage.
