A nutritious twist on pizza that combines creamy cottage cheese, savory marinara, and fresh vegetables, baked to perfection.

Ingredients

  • 1 cup Cottage Cheese
  • 1 cup Marinara Sauce
  • 1 cup Bell Peppers
  • 1 cup Mushrooms
  • 1 cup Spinach or Kale
  • 1 cup Shredded Mozzarella Cheese
  • 1 tablespoon Olive Oil
  • Salt & Pepper to taste
  • 1/4 cup Sliced Olives
  • 1/4 cup Diced Onions
  • Fresh Basil to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cottage cheese, marinara sauce, salt, and pepper. Mix until well incorporated.
  3. Toss the bell peppers, mushrooms, onions, and spinach (or kale) with olive oil in a separate bowl.
  4. Layer the creamy cottage cheese mixture on the bottom of a baking dish. Top with the veggie mixture.
  5. Sprinkle the shredded mozzarella cheese evenly over the top.
  6. Add your sliced olives on top of the cheese.
  7. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
  8. Remove from oven and let cool for a few minutes. Garnish with fresh basil before serving.

Notes

You can easily customize this bowl by swapping veggies or adding proteins like chicken or turkey sausage.
