A quick and easy one-dish meal featuring tender chicken and zucchini, perfect for busy weeknights.

  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized pieces and slice the zucchinis into round pieces.
  3. In a large baking dish, combine the chicken pieces and zucchini slices.
  4. Drizzle the mixture with olive oil, then sprinkle garlic powder, onion powder, salt, pepper, and Italian seasoning over the top.
  5. Toss everything well until the chicken and zucchini are evenly coated.
  6. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the zucchini is tender.

Notes

Feel free to substitute chicken with turkey or tofu for a different protein source. Add cheese for a cheesy crust in the last few minutes of baking.
