A comforting, creamy pasta dish made with tender chicken, mushrooms, and a luscious cheese sauce, perfect for weeknight dinners or gatherings.

  • 8 oz spaghetti or fettuccine
  • 2 cups cooked chicken, shredded
  • 1 cup mushrooms, sliced
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the spaghetti or fettuccine according to package instructions; drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the onions and garlic, sauté until softened.
  4. Stir in the mushrooms and cook until they are tender.
  5. Add the shredded chicken to the skillet and mix well to combine.
  6. Pour in the chicken broth and heavy cream, then stir in the grated Parmesan cheese. Season with salt, pepper, and thyme.
  7. Combine the cooked pasta with the chicken mixture, mixing until well-coated.
  8. Transfer the mixture to a greased baking dish and top with shredded mozzarella cheese.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Garnish with fresh parsley before serving.

Notes

Consider adding a pinch of nutmeg to the creamy sauce for extra flavor. A mix of breadcrumbs with the mozzarella can add a nice crunch.
