Ingredients
- 4 chicken thighs
- 2 cups mixed vegetables (carrots, peas, potatoes)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until softened and fragrant.
- Introduce the chicken thighs to the pot and cook until browned on both sides.
- Stir in the mixed vegetables, chicken broth, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then lower the heat and let it simmer for about 30 minutes, or until the chicken is cooked through.
- If you want a thicker stew, blend the flour with a bit of water to create a slurry and add it to the pot. Stir well and allow it to simmer for a few more minutes until thickened.

Notes
For added flavor, consider browning the chicken thighs for a few more minutes. You can also add a splash of white wine after browning the chicken.
