A warm, hearty chicken stew with succulent chicken thighs, vibrant mixed vegetables, and aromatic herbs, perfect for cozy evenings.

Ingredients

  • 4 chicken thighs
  • 2 cups mixed vegetables (carrots, peas, potatoes)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until softened and fragrant.
  3. Introduce the chicken thighs to the pot and cook until browned on both sides.
  4. Stir in the mixed vegetables, chicken broth, thyme, rosemary, salt, and pepper.
  5. Bring the mixture to a boil, then lower the heat and let it simmer for about 30 minutes, or until the chicken is cooked through.
  6. If you want a thicker stew, blend the flour with a bit of water to create a slurry and add it to the pot. Stir well and allow it to simmer for a few more minutes until thickened.
  7. Serve hot, and enjoy the comforting flavors!

Notes

For added flavor, consider browning the chicken thighs for a few more minutes. You can also add a splash of white wine after browning the chicken.
