Ingredients
- 2 chicken breasts
- 1 cup breadcrumbs (panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- Salt and pepper to taste

Instructions
- Preheat your skillet with olive oil over medium heat.
- Flatten the chicken breasts to about 1/2-inch thick using a meat mallet.
- Season the chicken generously with salt and pepper.
- In a bowl, beat the eggs until frothy, and in another bowl, combine breadcrumbs and Parmesan cheese.
- Dip each chicken breast in the egg mixture, then dredge in the breadcrumb mix, pressing to adhere.
- Carefully place chicken in the hot skillet and fry for 3-4 minutes per side until golden brown and cooked through.
- Remove from heat and let rest briefly. Serve with arugula and lemon wedges.
