A golden, crispy chicken dish that’s a staple in Italian cuisine, perfect for dinner parties or weeknight meals.

  • 2 chicken breasts
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Arugula for serving
  • Lemon wedges for serving

Instructions

  1. Preheat your skillet with olive oil over medium heat.
  2. Flatten the chicken breasts to about 1/2-inch thick using a meat mallet.
  3. Season the chicken generously with salt and pepper.
  4. In a bowl, beat the eggs until frothy, and in another bowl, combine breadcrumbs and Parmesan cheese.
  5. Dip each chicken breast in the egg mixture, then dredge in the breadcrumb mix, pressing to adhere.
  6. Carefully place chicken in the hot skillet and fry for 3-4 minutes per side until golden brown and cooked through.
  7. Remove from heat and let rest briefly. Serve with arugula and lemon wedges.

Notes

Use panko breadcrumbs for extra crunch and ensure oil is hot before frying.
