Description
A classic comfort food dish featuring succulent chicken breasts filled with rich, herby butter, baked to golden perfection.
Ingredients
- 4 boneless chicken breasts
- 1/2 cup unsalted butter (softened)
- 2 cloves garlic (minced)
- 1 tablespoon fresh parsley (chopped)
- 1 tablespoon fresh dill (chopped)
- 1 tablespoon fresh chives (chopped)
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 2 eggs (beaten)
- 2 cups breadcrumbs
- Salt and pepper to taste
- Olive oil or melted butter (for baking)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the softened butter with minced garlic, parsley, dill, chives, lemon juice, salt, and pepper until well combined.
- Carefully slice a pocket into each chicken breast and stuff each with the herb butter mix.
- Dip each stuffed chicken breast into flour, then into the beaten eggs, and finally coat thoroughly with breadcrumbs.
- Lay the coated chicken breasts in a greased baking dish.
- Drizzle olive oil or melted butter over the chickens for an extra golden touch.
- Bake for 25-30 minutes or until the chicken is cooked through and has a lovely golden brown color.
- Serve hot and relish the delicious flavors!
Notes
Use a meat mallet to flatten the chicken slightly for even cooking. Experiment with herbs; thyme or tarragon can add unique flavors.
