A classic comfort food dish featuring succulent chicken breasts filled with rich, herby butter, baked to golden perfection.

Ingredients

  • 4 boneless chicken breasts
  • 1/2 cup unsalted butter (softened)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 tablespoon fresh chives (chopped)
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 2 eggs (beaten)
  • 2 cups breadcrumbs
  • Salt and pepper to taste
  • Olive oil or melted butter (for baking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the softened butter with minced garlic, parsley, dill, chives, lemon juice, salt, and pepper until well combined.
  3. Carefully slice a pocket into each chicken breast and stuff each with the herb butter mix.
  4. Dip each stuffed chicken breast into flour, then into the beaten eggs, and finally coat thoroughly with breadcrumbs.
  5. Lay the coated chicken breasts in a greased baking dish.
  6. Drizzle olive oil or melted butter over the chickens for an extra golden touch.
  7. Bake for 25-30 minutes or until the chicken is cooked through and has a lovely golden brown color.
  8. Serve hot and relish the delicious flavors!

Notes

Use a meat mallet to flatten the chicken slightly for even cooking. Experiment with herbs; thyme or tarragon can add unique flavors.
