A comforting bowl of warmth with tender chicken, fluffy gnocchi, and fresh greens in a creamy broth.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 package potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup mixed vegetables (carrots, celery, onion)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the minced garlic and mixed vegetables until they’re soft and fragrant.
  2. Stir in the shredded chicken and pour in chicken broth, bringing the mixture to a simmer.
  3. Toss in the gnocchi and watch for them to float to the top, indicating they’re cooked through.
  4. Stir in the heavy cream, followed by fresh spinach and Italian seasoning. Mix well.
  5. Season with salt and pepper to taste.
  6. Let it sit and simmer for a few minutes before serving hot.

Notes

Garnish with fresh herbs or grated Parmesan for enhanced flavor. Substitute rotisserie chicken for convenience.
