Description

Delicious and customizable chicken burrito bowls packed with flavors and fresh toppings, perfect for any occasion.


Ingredients

  • 2 cups cooked rice (any variety)
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream (optional)
  • Lime wedges, for serving
  • Chopped cilantro, for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and sprinkle the taco seasoning over it. Sauté until the chicken is cooked through and no longer pink, about 5-7 minutes.
  2. In serving bowls, layer a generous portion of the cooked rice as your base.
  3. Top the rice with the seasoned chicken.
  4. Add layers of black beans, corn, diced tomatoes, and fresh avocado on top.
  5. Finish off with a sprinkle of shredded cheese, and a dollop of sour cream if you like.
  6. Serve with lime wedges on the side and garnish with chopped cilantro for a burst of flavor.

Notes

Consider using pre-cooked rotisserie chicken to save time. You can also swap out ingredients based on personal preference.
