Description
Chicken Bruschetta Pasta is a celebration of flavors with tender chicken, cherry tomatoes, and pasta drizzled with balsamic vinegar.
Ingredients
- 8 oz pasta (penne or spaghetti)
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- Grated Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown and cooked through—about 6-7 minutes on each side. Remove from the skillet and slice.
- In the same skillet, add the minced garlic and cook until fragrant. Then, add the cherry tomatoes and cook until they start to soften.
- Stir in the fresh basil and balsamic vinegar, cooking for an additional minute.
- Combine the cooked pasta with the tomato mixture and top with the sliced chicken.
- Serve with grated Parmesan cheese on top.
Notes
For a vegetarian option, substitute chicken with roasted chickpeas and use vegetable broth to cook the pasta.
