Description

Chicken Bruschetta Pasta is a celebration of flavors with tender chicken, cherry tomatoes, and pasta drizzled with balsamic vinegar.


Ingredients

  • 8 oz pasta (penne or spaghetti)
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • Grated Parmesan cheese for serving


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown and cooked through—about 6-7 minutes on each side. Remove from the skillet and slice.
  3. In the same skillet, add the minced garlic and cook until fragrant. Then, add the cherry tomatoes and cook until they start to soften.
  4. Stir in the fresh basil and balsamic vinegar, cooking for an additional minute.
  5. Combine the cooked pasta with the tomato mixture and top with the sliced chicken.
  6. Serve with grated Parmesan cheese on top.

Notes

For a vegetarian option, substitute chicken with roasted chickpeas and use vegetable broth to cook the pasta.
