Description
Delicious cheesy enchiladas made easy with rotisserie chicken, perfect for busy weeknights.
Ingredients
- 2 cups rotisserie chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 corn or flour tortillas
- 1 can (10 oz) enchilada sauce
- 1 cup sour cream
- 1/2 cup diced onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, 1/2 cup of shredded cheese, diced onions, garlic powder, salt, and pepper. Mix it well.
- Spread a little enchilada sauce on the bottom of a baking dish to prevent sticking.
- Take a tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish. Repeat this with all tortillas.
- Once all the tortillas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Serve hot with sour cream and garnish with chopped cilantro if desired.
Notes
For a spicier kick, add sliced jalapeños or a pinch of cayenne pepper to the chicken filling.
