Cheesy Rotisserie Chicken Enchiladas

Delicious cheesy enchiladas made easy with rotisserie chicken, perfect for busy weeknights.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn or flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1 cup sour cream
  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, 1/2 cup of shredded cheese, diced onions, garlic powder, salt, and pepper. Mix it well.
  3. Spread a little enchilada sauce on the bottom of a baking dish to prevent sticking.
  4. Take a tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish. Repeat this with all tortillas.
  5. Once all the tortillas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  6. Cover with foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Serve hot with sour cream and garnish with chopped cilantro if desired.

Notes

For a spicier kick, add sliced jalapeños or a pinch of cayenne pepper to the chicken filling.
