Description

A comforting one-skillet dish that combines chicken, broccoli, and rotini pasta in a creamy ranch sauce for a quick weeknight meal.


Ingredients

  • 2 cups rotini pasta
  • 2 cups broccoli florets
  • 1 pound chicken breast, diced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1 cup heavy cream or milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Cook the rotini pasta according to the package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and completely cooked through, about 5-7 minutes.
  3. Add the broccoli florets to the skillet and cook for an additional 3-4 minutes until tender.
  4. Stir the cooked rotini pasta into the skillet with the chicken and broccoli.
  5. In a separate bowl, mix the heavy cream (or milk) with the ranch seasoning mix. Pour this mixture over the pasta, chicken, and broccoli.
  6. Stir in the shredded cheddar cheese, mixing everything together until well combined and the cheese has melted.
  7. Season with salt and pepper to taste.
  8. Serve warm and enjoy your cheesy dish!

Notes

For a lighter version, substitute Greek yogurt for heavy cream. Pair with a garden salad or garlic bread.
