A comforting one-skillet dish that combines chicken, broccoli, and rotini pasta in a creamy ranch sauce for a quick weeknight meal.
Ingredients
- 2 cups rotini pasta
- 2 cups broccoli florets
- 1 pound chicken breast, diced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1 cup heavy cream or milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to the package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and completely cooked through, about 5-7 minutes.
- Add the broccoli florets to the skillet and cook for an additional 3-4 minutes until tender.
- Stir the cooked rotini pasta into the skillet with the chicken and broccoli.
- In a separate bowl, mix the heavy cream (or milk) with the ranch seasoning mix. Pour this mixture over the pasta, chicken, and broccoli.
- Stir in the shredded cheddar cheese, mixing everything together until well combined and the cheese has melted.
- Season with salt and pepper to taste.

Notes
For a lighter version, substitute Greek yogurt for heavy cream. Pair with a garden salad or garlic bread.
