A hearty and creamy pasta dish made with tender chicken, cooked in one pot for minimal cleanup and maximum flavor.

Ingredients

Scale
  • 2 cups pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 2 chicken breasts, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 6-7 minutes.
  3. Stir in the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and bring to a gentle boil. Add the pasta and cook according to package instructions until al dente.
  5. Reduce the heat and mix in the heavy cream and Parmesan cheese until creamy and well combined.
  6. Taste and adjust seasoning with salt and pepper as necessary.
  7. Serve hot, garnished with chopped parsley.

Notes

For an added flavor boost, consider adding a pinch of nutmeg to the cream or some red pepper flakes while sautéing garlic.
