A delightful fusion of classic Buffalo chicken wings wrapped in delicious tortillas, perfect for any occasion.
Ingredients
- 2 cups shredded cooked chicken
- 1 cup buffalo hot sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can diced green chilies
- 8 flour tortillas
- 1/2 cup sour cream
- 1/2 cup chopped green onions
- 1 cup additional shredded cheese for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, buffalo hot sauce, 1 cup of shredded cheese, and diced green chilies.
- Lay a tortilla flat and spoon some of the chicken mixture down the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.
- Spread sour cream over the top of the enchiladas and sprinkle with the additional shredded cheese and chopped green onions.
- Bake in the oven for 20-25 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
You can substitute the chicken for shredded turkey or even use a plant-based substitute to create a vegetarian version.
