A delightful fusion of classic Buffalo chicken wings wrapped in delicious tortillas, perfect for any occasion.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup buffalo hot sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can diced green chilies
  • 8 flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup chopped green onions
  • 1 cup additional shredded cheese for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, buffalo hot sauce, 1 cup of shredded cheese, and diced green chilies.
  3. Lay a tortilla flat and spoon some of the chicken mixture down the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.
  4. Spread sour cream over the top of the enchiladas and sprinkle with the additional shredded cheese and chopped green onions.
  5. Bake in the oven for 20-25 minutes, until the cheese is melted and bubbly.
  6. Serve hot and enjoy!

Notes

You can substitute the chicken for shredded turkey or even use a plant-based substitute to create a vegetarian version.
