Description

Hearty Buffalo Chicken Bowls with tender shredded chicken, spicy buffalo sauce, fluffy rice or quinoa, fresh veggies, and creamy ranch dressing for a quick and satisfying meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 2 cups cooked rice or quinoa
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup blue cheese crumbles (optional)
  • 1/4 cup ranch dressing
  • 1/4 cup sliced green onions


Instructions

  1. In a large bowl, combine the shredded chicken and buffalo sauce. Mix well until fully coated.
  2. Prepare the rice or quinoa according to the package instructions.
  3. Layer the cooked rice or quinoa into serving bowls.
  4. Add the buffalo chicken mixture on top of the grains.
  5. Finish with shredded lettuce, diced tomatoes, blue cheese crumbles, and ranch dressing.
  6. Garnish with sliced green onions before serving.

Notes

Feel free to switch out toppings based on preferences. For a vegetarian option, substitute chicken with chickpeas or tofu.
