Description

A flavorful dish featuring chicken thighs braised with green olives, tomatoes, and a medley of herbs, embodying the essence of French cuisine.

Ingredients

  • 4 chicken thighs
  • 1 cup green olives, pitted and halved
  • 2 cups tomatoes, diced
  • 2 shallots, finely chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 cup white wine
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and brown them on both sides in the skillet.
  3. Remove the chicken from the skillet and set aside.
  4. Add the shallots and garlic to the skillet, sautéing until fragrant.
  5. Stir in the diced tomatoes, olives, thyme, and white wine, mixing well.
  6. Return the browned chicken to the skillet, cover, and let it simmer for 30 minutes, or until the chicken is fully cooked.
  7. Serve hot and enjoy the combination of flavors!

Notes

For added depth of flavor, marinate the chicken thighs in olive oil, salt, and herbs a few hours before cooking. A good quality white wine enhances the dish’s flavor.
