Description

A delightful fusion of flavors transforming typical weeknight dinners into memorable feasts with creamy chicken, herbs, and sun-dried tomatoes.


Ingredients

  • 2 large chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tbsp oil from the sun-dried tomato jar
  • 1 1/2 cups fresh spinach, roughly chopped


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the chicken breasts horizontally, then season both sides with salt, pepper, and garlic powder.
  3. Arrange the seasoned chicken in a greased baking dish.
  4. In a mixing bowl, beat together the cream cheese and heavy cream until smooth and creamy.
  5. Mix in onion powder, paprika, Italian seasoning, and half of the mozzarella.
  6. Pour the creamy mixture evenly over the chicken breasts, ensuring they are well-coated.
  7. Drizzle the oil from the sun-dried tomato jar over the dish, then sprinkle the chopped sun-dried tomatoes throughout.
  8. Cover the dish with foil and bake for 20 minutes.
  9. After 20 minutes, remove the foil, add the chopped fresh spinach, and sprinkle the remaining mozzarella cheese on top.
  10. Return to the oven and bake uncovered for 10 more minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Notes

This dish can be stored in the refrigerator for 3-4 days and frozen for up to 2 months. Reheat in the oven or microwave.
