Ingredients
- 1 pound boneless, skinless chicken breasts
- 8 ounces fresh mushrooms (any variety)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, and dried thyme.
- Sear the chicken for about 5-7 minutes on each side until cooked through.
- Remove the chicken and set it aside. In the same pan, add the mushrooms and sauté until golden.
- Add the minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the skillet.
- Return the chicken to the pan, cover, and let simmer for about 2 minutes to meld the flavors.
- Serve hot, drizzled with the mushroom sauce!
