  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh mushrooms (any variety)
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, and dried thyme.
  3. Sear the chicken for about 5-7 minutes on each side until cooked through.
  4. Remove the chicken and set it aside. In the same pan, add the mushrooms and sauté until golden.
  5. Add the minced garlic and cook for another minute.
  6. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the skillet.
  7. Return the chicken to the pan, cover, and let simmer for about 2 minutes to meld the flavors.
  8. Serve hot, drizzled with the mushroom sauce!
