A vibrant and customizable salad bowl featuring grilled chicken, fresh veggies, and a zesty lime dressing.

Ingredients

  • 2 grilled chicken breasts, sliced
  • 4 cups romaine lettuce, chopped
  • 1 cup sweet corn (canned or fresh)
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • Juice of 2 limes
  • Salt and pepper to taste
  • Optional toppings: cilantro, tortilla chips, or cheese

Instructions

  1. In a large bowl, combine the chopped romaine, sweet corn, black beans, and diced avocado.
  2. Layer the sliced grilled chicken on top of the mixture.
  3. Squeeze the juice of the limes over the salad and season with salt and pepper to taste.
  4. Gently toss everything together to mix all the ingredients.
  5. Serve immediately, or store in the refrigerator for meal prep.

Notes

Best served fresh, especially if you’ve added avocado, which can brown over time.
