A comforting, flavorful meal that combines tender chicken thighs with nutty orzo pasta, sun-dried tomatoes, and parmesan.

Ingredients

  • 2 chicken thighs
  • 1 cup orzo pasta
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, grated
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper. Add them to the skillet and brown for about 5-7 minutes on each side. Once done, remove the chicken and set it aside.
  3. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Stir in the orzo and chicken broth, mixing well to combine.
  5. Return the chicken thighs to the skillet. Cover and let it simmer for about 15 minutes, or until the orzo is tender and the chicken is cooked through.
  6. Just before serving, stir in the grated parmesan cheese and allow it to melt for another minute.
  7. Serve hot, garnished with fresh basil for an extra pop of flavor.

Notes

Make sure to brown the chicken properly for that extra depth of flavor. Don’t skip on the fresh basil – it adds a vibrant touch. Adjust the consistency by controlling the amount of broth used.
