  • 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (plus extra for garnish)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • A pinch of cayenne pepper (optional, for a little heat)

Instructions

  1. Begin by patting the chicken dry using paper towels.
  2. Generously season both sides of the chicken with salt, black pepper, smoked paprika, garlic powder, and onion powder.
  3. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large oven-safe skillet over medium-high heat.
  4. Once hot, add the chicken and cook for about 4-5 minutes per side until golden brown. Remove the chicken and set it aside.
  5. Lower the heat to medium and add the remaining tablespoon of butter to the skillet.
  6. Sauté the chopped onion for about 3-4 minutes until it becomes soft and translucent.
  7. Stir in the minced garlic and cook for another 30 seconds.
  8. Pour in the chicken broth, scraping up any browned bits from the skillet. Allow it to reduce slightly.
  9. Add the heavy cream and Parmesan cheese, stirring until the sauce is smooth and starts to thicken.
  10. Return the chicken to the skillet, nestling it into the sauce.
  11. Reduce heat to low and let it simmer gently for 8-10 minutes until fully cooked.
  12. Sprinkle fresh parsley over the dish and serve hot.

Notes

Use a cast iron skillet for the best sear and flavor. Adjust seasonings to your preference.
