Ingredients
- 2 cups grilled or roasted chicken, diced
- 1 cup sweet corn (grilled or canned)
- 1 large cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- Optional: crumbled feta cheese for garnish
Instructions
- Prepare the chicken: If using raw chicken, grill or roast it until fully cooked. Let it cool, then dice into bite-sized pieces.
- Cook the corn: If using fresh corn, grill it until charred. For canned corn, simply drain and rinse.
- Chop the veggies: Dice the cucumber and finely chop the red onion.
- Mix the dressing: In a large bowl, combine the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper.
- Combine everything: Add the diced chicken, corn, cucumber, and red onion to the dressing. Stir until well combined.
- Garnish (optional): Top with crumbled feta cheese if desired and serve immediately or refrigerate for later.
Notes
For convenience, substitute chicken with rotisserie chicken or use Greek yogurt instead of mayonnaise for a lighter version.
