A delightful dish that combines the essential flavors of Mexican street corn with the freshness of a classic chicken salad, perfect for summer picnics or gatherings.


Ingredients

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn (grilled or canned)
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish


Instructions

  1. Prepare the chicken: If using raw chicken, grill or roast it until fully cooked. Let it cool, then dice into bite-sized pieces.
  2. Cook the corn: If using fresh corn, grill it until charred. For canned corn, simply drain and rinse.
  3. Chop the veggies: Dice the cucumber and finely chop the red onion.
  4. Mix the dressing: In a large bowl, combine the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper.
  5. Combine everything: Add the diced chicken, corn, cucumber, and red onion to the dressing. Stir until well combined.
  6. Garnish (optional): Top with crumbled feta cheese if desired and serve immediately or refrigerate for later.

Notes

For convenience, substitute chicken with rotisserie chicken or use Greek yogurt instead of mayonnaise for a lighter version.
