A vibrant salad featuring grilled chicken, black beans, sweet corn, and creamy avocado, dressed with smoky chipotle-lime dressing.

  • 1 cup black beans, canned or cooked
  • 1 cup sweet corn, frozen or fresh
  • 4 cups romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chipotle-lime dressing

Instructions

  1. Grill the chicken until fully done, then slice into strips.
  2. In a large bowl, combine the black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  3. Add the sliced chicken on top of the veggie mix.
  4. Drizzle with chipotle-lime dressing and gently toss to combine all elements.
  5. Serve immediately or store in the fridge for later.
