Description

A vibrant and flavorful salad featuring grilled chicken, black beans, sweet corn, and a smoky chipotle-lime dressing.


Ingredients

  • 2 Grilled chicken breasts
  • 1 can Black beans, rinsed and drained
  • 1 cup Sweet corn, cooked
  • 4 cups Romaine lettuce, chopped
  • 1 Avocado, diced
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Chipotle-lime dressing


Instructions

  1. Grill the chicken until fully cooked, approximately 6-8 minutes per side.
  2. Prepare the salad base by combining black beans, sweet corn, romaine, avocado, and cherry tomatoes in a bowl.
  3. Slice the grilled chicken into strips.
  4. Add chicken on top of the salad mixture.
  5. Drizzle the chipotle-lime dressing over the salad.
  6. Toss gently to combine and serve immediately.

Notes

Store salad base and dressing separately until ready to serve to keep ingredients fresh.
