Ingredients
- 2 Grilled chicken breasts
- 1 can Black beans, rinsed and drained
- 1 cup Sweet corn, cooked
- 4 cups Romaine lettuce, chopped
- 1 Avocado, diced
- 1 cup Cherry tomatoes, halved
- 1/2 cup Chipotle-lime dressing
Instructions
- Grill the chicken until fully cooked, approximately 6-8 minutes per side.
- Prepare the salad base by combining black beans, sweet corn, romaine, avocado, and cherry tomatoes in a bowl.
- Slice the grilled chicken into strips.
- Add chicken on top of the salad mixture.
- Drizzle the chipotle-lime dressing over the salad.
- Toss gently to combine and serve immediately.
Notes
Store salad base and dressing separately until ready to serve to keep ingredients fresh.
