Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice

  2. Add the rice, chicken broth, chopped onion, garlic powder, salt, and pepper.
  3. Stir the mixture to combine, then add the frozen mixed vegetables on top.
  4. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  5. About 15 minutes before serving, sprinkle the shredded cheddar cheese on top, cover, and allow it to melt.
  6. Serve warm and enjoy your delightful comfort food!

Notes

For a creamier texture, consider adding cream of chicken soup. This recipe is versatile; try brown rice or substitute chickpeas for a vegan option.
