Description

A quick and healthy deconstructed version of the classic egg roll, this dish combines the savory taste of shrimp with fresh vegetables in a savory soy sauce dressing.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups coleslaw mix (cabbage and carrots)
  • 1 bell pepper, diced
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 teaspoons sesame seeds (optional)


Instructions

  1. Heat the skillet over medium heat, then add sesame oil.
  2. Add garlic and ginger to the skillet and sauté for about 1 minute until fragrant.
  3. Cook the shrimp until they are pink and opaque, about 2-3 minutes.
  4. Stir in coleslaw mix and diced bell pepper, cooking until vegetables are just tender, about 2-4 minutes.
  5. Add soy sauce, salt, and pepper, mixing well.
  6. Remove from heat and garnish with sliced green onions and sesame seeds, if using. Serve hot.
