Ingredients
- 1 lb chicken breast, cubed
- 1 cup cashews
- 2 cups mixed colorful vegetables (bell peppers, broccoli, snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the cubed chicken, cashews, and mixed vegetables in a large bowl.
- Whisk together the soy sauce, honey, olive oil, minced garlic, and minced ginger in a separate bowl; season with salt and pepper.
- Pour the sauce over the chicken and vegetable mixture, tossing gently to coat.
- Spread the mixture evenly onto a sheet pan in a single layer.
