Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup cashews
  • 2 cups mixed colorful vegetables (bell peppers, broccoli, snap peas)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the cubed chicken, cashews, and mixed vegetables in a large bowl.
  3. Whisk together the soy sauce, honey, olive oil, minced garlic, and minced ginger in a separate bowl; season with salt and pepper.
  4. Pour the sauce over the chicken and vegetable mixture, tossing gently to coat.
  5. Spread the mixture evenly onto a sheet pan in a single layer.
