Description

A delightful medley of savory flavors and textures, this Rotisserie Chicken Fried Rice is quick to prepare and perfect for a family-friendly meal.

Ingredients

  • 2 cups cooked rice
  • 1 cup rotisserie chicken, shredded
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat until it shimmers.
  2. Add the mixed vegetables and sauté until tender, about 3-4 minutes.
  3. Push the vegetables to one side of the skillet and pour in the beaten eggs, scrambling gently until fully cooked.
  4. Add the cooked rice and shredded rotisserie chicken, mixing everything together.
  5. Pour in the soy sauce, stirring to ensure even distribution.
  6. Cook for another 2-3 minutes until heated through, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

Use cold rice to prevent mushiness and achieve the desired texture. Consider different vegetable or protein variations to suit your tastes.
