Description

Easy and flavorful enchiladas made with shredded rotisserie chicken, vibrant red enchilada sauce, and melted cheese.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 flour or corn tortillas
  • 2 cups red enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced onion
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
  3. Combine shredded chicken with half of the red enchilada sauce, sautéed onions, salt, and pepper in a large bowl. Mix well.
  4. Fill each tortilla with the chicken mixture, roll it up, and place seam side down in a greased baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the shredded cheese on top.
  6. Bake in the oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Serve hot, topped with sour cream and garnished with cilantro if desired.

Notes

For a gluten-free option, use corn tortillas. Add a pinch of cumin or chili powder for extra flavor.
