Easy and flavorful enchiladas made with shredded rotisserie chicken, vibrant red enchilada sauce, and melted cheese.
Ingredients
- 2 cups shredded rotisserie chicken
- 8 flour or corn tortillas
- 2 cups red enchilada sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced onion
- 1/2 cup sour cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
- Combine shredded chicken with half of the red enchilada sauce, sautéed onions, salt, and pepper in a large bowl. Mix well.
- Fill each tortilla with the chicken mixture, roll it up, and place seam side down in a greased baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the shredded cheese on top.
- Bake in the oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Serve hot, topped with sour cream and garnished with cilantro if desired.
Notes
For a gluten-free option, use corn tortillas. Add a pinch of cumin or chili powder for extra flavor.
