A heartwarming casserole made with rotisserie chicken, creamy soup, and cheesy goodness, perfect for busy weeknights.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup cooked rice or pasta
  • 1 can cream of chicken soup
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup broccoli florets (optional)
  • 1/2 cup milk
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded rotisserie chicken, cooked rice or pasta, cream of chicken soup, shredded cheese, broccoli, milk, and the salt and pepper. Mix until everything is evenly coated.
  3. Pour the chicken mixture into a greased casserole dish, spreading it out evenly.
  4. Sprinkle the breadcrumbs over the top, if desired.
  5. Bake for 25-30 minutes, or until heated through and the cheese is bubbling.
  6. Serve warm and enjoy!

Notes

You can substitute the cheese or chicken with turkey. Pairs well with a simple salad or crusty bread.
