A creamy, cheesy medley of shredded rotisserie chicken, noodles or rice, and vegetables, baked to perfection for a comforting weeknight meal.

  • 2 cups cooked rotisserie chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup frozen mixed vegetables
  • 2 cups cooked noodles or rice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded rotisserie chicken, cream of chicken soup, sour cream, shredded cheese, frozen mixed vegetables, cooked noodles or rice, garlic powder, salt, and pepper. Mix until everything is well incorporated.
  3. Transfer the mixture to a greased casserole dish, spreading it evenly.
  4. If you like a crunchy topping, sprinkle breadcrumbs over the mixture.
  5. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot, bubbly, and the top is golden brown.
  6. Allow it to cool slightly before serving to let all the flavors meld together.

Notes

For a creamier casserole, add an extra dollop of sour cream or a splash of chicken broth before baking. You can customize the casserole with your favorite spices or herbs.
