Ingredients
- 2 large boneless skinless chicken breasts
- Salt, to taste
- Pepper, to taste
- 1/4 cup vegetable oil
- 1/2 cup flour
- 1 1/2 teaspoons seasoned salt
- 2 eggs, beaten
- 1/2 teaspoon garlic powder
- 1 1/2 cups panko breadcrumbs
- 1/3 cup Parmesan cheese, freshly grated
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1 cup marinara sauce
- 1 1/2 cups mozzarella cheese, shredded
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Arrange three shallow pans for flour, eggs, and breadcrumbs.
- Halve the chicken breasts lengthwise and pound them to about ½ inch thick.
- Pat the chicken dry and season with salt and pepper.
- Coat each piece in flour, shaking off excess.
- Submerge the chicken in the egg mixture and roll in breadcrumbs.
- Warm the oil in a skillet and fry the chicken for 3-4 minutes on each side.
- Place the chicken on a baking sheet, top with marinara and mozzarella, and bake for 12 minutes.
- Broil for 1-2 minutes until cheese is golden brown and bubbly.
Notes
For gluten-free, substitute regular flour and panko breadcrumbs. For a lighter option, bake instead of frying.
