Description

A heartwarming Chicken Parmesan recipe featuring juicy chicken breasts in a crunchy panko coating, topped with rich marinara and melted mozzarella.


Ingredients

  • 2 large boneless skinless chicken breasts
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup vegetable oil
  • 1/2 cup flour
  • 1 1/2 teaspoons seasoned salt
  • 2 eggs, beaten
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups panko breadcrumbs
  • 1/3 cup Parmesan cheese, freshly grated
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce
  • 1 1/2 cups mozzarella cheese, shredded
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Arrange three shallow pans for flour, eggs, and breadcrumbs.
  3. Halve the chicken breasts lengthwise and pound them to about ½ inch thick.
  4. Pat the chicken dry and season with salt and pepper.
  5. Coat each piece in flour, shaking off excess.
  6. Submerge the chicken in the egg mixture and roll in breadcrumbs.
  7. Warm the oil in a skillet and fry the chicken for 3-4 minutes on each side.
  8. Place the chicken on a baking sheet, top with marinara and mozzarella, and bake for 12 minutes.
  9. Broil for 1-2 minutes until cheese is golden brown and bubbly.

Notes

For gluten-free, substitute regular flour and panko breadcrumbs. For a lighter option, bake instead of frying.
