Description

A comforting, cheesy casserole loaded with chicken, pasta, and a hint of spice, perfect for busy weeknights.


Ingredients

  • 8 oz. spaghetti (about half a box)
  • 2 cups cooked chicken (shredded)
  • 2 cups chicken broth
  • 1 can (10.5 oz.) cream of mushroom soup
  • 1 cup diced tomatoes with green chilies
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bring water to a boil in a large pot. Once boiling, add the spaghetti and cook according to package instructions until al dente. Drain in a colander and set aside.
  3. Add the olive oil to a skillet over medium heat. Sauté the chopped onion and bell pepper until soft, about 5 minutes.
  4. Combine the cooked spaghetti, shredded chicken, chicken broth, cream of mushroom soup, diced tomatoes, sautéed onion, bell pepper, garlic powder, salt, and pepper in a large mixing bowl. Mix well.
  5. Transfer the spaghetti mixture into a greased 9×13 inch baking dish and spread it out evenly.
  6. Sprinkle the grated cheddar and mozzarella cheese on top of the spaghetti mixture.
  7. Bake in the preheated oven for about 25 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.

Notes

Feel free to swap out ingredients based on pantry or taste preferences. Using rotisserie chicken is a great time-saver!
