Description
A comforting, cheesy casserole loaded with chicken, pasta, and a hint of spice, perfect for busy weeknights.
Ingredients
- 8 oz. spaghetti (about half a box)
- 2 cups cooked chicken (shredded)
- 2 cups chicken broth
- 1 can (10.5 oz.) cream of mushroom soup
- 1 cup diced tomatoes with green chilies
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 cup grated cheddar cheese
- 1/2 cup grated mozzarella cheese
- 1/4 teaspoon garlic powder
- Salt and pepper (to taste)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Bring water to a boil in a large pot. Once boiling, add the spaghetti and cook according to package instructions until al dente. Drain in a colander and set aside.
- Add the olive oil to a skillet over medium heat. Sauté the chopped onion and bell pepper until soft, about 5 minutes.
- Combine the cooked spaghetti, shredded chicken, chicken broth, cream of mushroom soup, diced tomatoes, sautéed onion, bell pepper, garlic powder, salt, and pepper in a large mixing bowl. Mix well.
- Transfer the spaghetti mixture into a greased 9×13 inch baking dish and spread it out evenly.
- Sprinkle the grated cheddar and mozzarella cheese on top of the spaghetti mixture.
- Bake in the preheated oven for about 25 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
Feel free to swap out ingredients based on pantry or taste preferences. Using rotisserie chicken is a great time-saver!
