Ingredients

  • 1 lb chicken breast, cubed
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped
  • Optional: sesame seeds, chili flakes


Instructions

  1. Cook the Chicken: Heat olive or sesame oil in a large skillet over medium heat. Add the cubed chicken and sauté until browned and cooked through. Remove from the pan and set aside.
  2. Make the Sauce: In the same skillet, add minced garlic and sauté until fragrant. Pour in soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Let it simmer for a couple of minutes.
  3. Thicken the Sauce: Stir in the cornstarch mixed with water. Continue cooking until the sauce thickens and becomes glossy.
  4. Combine Ingredients: Return the cooked chicken to the skillet. Add pineapple chunks and diced red bell pepper. Stir well to coat all the ingredients with the sauce.
  5. Add Rice: Mix in the cooked rice, ensuring everything is evenly heated and well combined.
  6. Garnish & Serve: Top with chopped green onions and sprinkle with sesame seeds if desired. Serve hot for a delightful meal!

Notes

For the best flavor, marinate your chicken in the soy sauce and pineapple juice mixture for at least 30 minutes before cooking. This enhances taste and tenderness.
