- 1 bell pepper, diced

- 1 cup pineapple chunks (fresh or canned)

Instructions
- Heat olive oil in a skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add onion, garlic, and bell pepper to the skillet. Sauté until soft and fragrant, about 3-4 minutes.
- Stir in the pineapple chunks and soy sauce, cooking for another 2-3 minutes until the pineapple is heated through and combined.
- Add the cooked rice to the skillet, mixing well to integrate all the flavors.
