Description

A comforting bowl of pasta featuring tender chicken and a creamy basil pesto sauce, perfect for weeknight dinners and special occasions.


Ingredients

  • 8 ounces of pasta (penne or fettuccine)
  • 2 cups of cooked chicken, shredded or diced
  • 1/2 cup basil pesto (store-bought or homemade)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Cook the pasta according to the package instructions, reserving 1 cup of pasta water before draining.
  2. Combine the cooked chicken and pesto in a large pot over medium heat. Stir for 1-2 minutes until warmed through.
  3. Pour in the heavy cream and stir until well combined.
  4. Gradually add the reserved pasta water to achieve your desired sauce consistency.
  5. Toss the cooked pasta into the sauce and sprinkle in the Parmesan cheese. Mix everything together thoroughly.
  6. Season with salt and pepper to your liking.
  7. Serve warm, garnished with fresh basil if desired.

Notes

For added flavor, consider topping with extra Parmesan and a drizzle of olive oil. Great with a garden salad or garlic bread.
