Ingredients

  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 chicken breasts
  • 8 ounces pasta (e.g., penne or fettuccine)
  • 1 cup pesto sauce
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the cherry tomatoes with olive oil, salt, and pepper.
  3. Roast the tomatoes for about 15-20 minutes, until caramelized.
  4. Meanwhile, cook the pasta according to package instructions until al dente.
  5. In a skillet, sear the chicken breasts for 7-8 minutes on each side until cooked through.
  6. In a large bowl, combine the cooked pasta, roasted tomatoes, sliced chicken, and pesto sauce.
  7. Plate the dish and serve topped with grated Parmesan cheese.
