A hearty one-pan dish combining tender chicken, sweet BBQ sauce, and fluffy rice, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, season and sear chicken for about 5 minutes on each side until browned.
  2. Whisk together BBQ sauce and honey in a small bowl while chicken cooks.
  3. Pour the BBQ mixture over the chicken, ensuring it is well-coated.
  4. Add rice and chicken broth to the skillet, stirring gently to combine.
  5. Bring to a simmer, cover, and cook on low for about 20 minutes until rice is tender.
  6. During the last 5 minutes of cooking, sprinkle mixed vegetables on top to steam.
  7. Let sit for 5 minutes before fluffing rice with a fork and serving warm.

Notes

Use tofu or chickpeas for a plant-based option. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
