Ingredients
- 12 ounces spaghetti
- 2 boneless, skinless chicken breasts
- 1 cup shredded Monterey Jack cheese
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- Paprika, to taste
- Italian seasoning, to taste
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with paprika, Italian seasoning, salt, and black pepper. Sauté until golden brown, about 5 to 7 minutes. Remove and set aside.
- Melt butter in the same skillet and add chopped onion. Cook until softened, about 3 to 4 minutes.
- Add minced garlic and sauté for an additional 30 seconds.
- Pour in chicken broth and heavy cream, bringing to a simmer. Let thicken for about 5 minutes.
- Return cooked spaghetti and chicken to the skillet, tossing to coat in the sauce.
- Sprinkle shredded Monterey Jack cheese on top, cover with a lid, and let melt for about 2 to 3 minutes. Serve hot, garnished with fresh parsley.
Notes
For extra flavor, marinate the chicken in spices longer before cooking.
