A culinary delight that marries savory umami flavors with rich creaminess for a comforting yet exciting dish.

Ingredients

Scale
  • 8 pieces skin-on, bone-in chicken thighs (or boneless for quicker cooking)
  • 4 tablespoons unsalted butter
  • 1/2 cup white miso
  • 3 tablespoons maple syrup
  • 1-inch piece ginger, grated
  • 8 cloves garlic, unpeeled and lightly smashed
  • 1 tablespoon rice vinegar
  • Black pepper, to taste
  • 2 pieces scallions, finely sliced
  • 2 teaspoons toasted sesame seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, melt the butter and whisk in miso, maple syrup, and grated ginger until smooth.
  3. Season the chicken thighs generously with black pepper. Arrange them in a baking dish.
  4. Pour the miso mixture over the chicken, ensuring each piece is coated well. Scatter the smashed garlic cloves around the chicken.
  5. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  6. Once done, drizzle with rice vinegar and garnish with scallions and sesame seeds before serving.

Notes

Allow the chicken to marinate in the miso mixture for at least 30 minutes for enhanced flavor.
