Ingredients
- 2 cups rotisserie chicken, shredded
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- 1 cup crushed buttery crackers
- 1/2 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the shredded chicken, cream of chicken soup, sour cream, and half of the cheese in a large bowl.
- Add salt and pepper to taste.
- Pour the chicken mixture into a greased casserole dish, spreading it evenly.
- Combine the crushed crackers and melted butter in a separate bowl.
- Sprinkle the cracker mixture evenly over the top of the chicken mix, then top with the remaining cheese.
- Bake for 25-30 minutes or until golden brown.
- Cool slightly before serving.
Notes
For a lighter option, substitute sour cream with Greek yogurt. For added nutrition, consider mixing in your favorite vegetables.
