Description

A rich and hearty casserole made with shredded rotisserie chicken, creamy sauce, and a crispy cracker topping, perfect for weeknight meals or special gatherings.


Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers
  • 1/2 cup melted butter


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the shredded chicken, cream of chicken soup, sour cream, and half of the cheese in a large bowl.
  3. Add salt and pepper to taste.
  4. Pour the chicken mixture into a greased casserole dish, spreading it evenly.
  5. Combine the crushed crackers and melted butter in a separate bowl.
  6. Sprinkle the cracker mixture evenly over the top of the chicken mix, then top with the remaining cheese.
  7. Bake for 25-30 minutes or until golden brown.
  8. Cool slightly before serving.

Notes

For a lighter option, substitute sour cream with Greek yogurt. For added nutrition, consider mixing in your favorite vegetables.
